Chocolate Cherry Sundae Cupcakes



As my boyfriends brother Luke turned 21 it was time to make some celebration cupcakes for the party...chocolate cherry sundae cupcakes...yum yum! Read more below for the recipe

Chocolate Cupcakes (makes 6)
I quadruped the below recipe to make 24 as made these for a 21st birthday party and always a good idea to have a few extras :)
 Ingredients
50g unsalted butter at room temperature
50g caster sugar
1 medium egg
1/2 teaspoon vanilla extract
25g self-raising flour
25g cocoa powder

 Method 
1) Cream together butter and sugar until pale then add the egg and beat until combined.
2) Sift the flour and cocoa and fold into the mixture, until smooth.
3) Spoon the mixture equally between the cupcake cases and bake for 8-10 minutes (in a cupcake maker)
4) When risen and golden in colour turn on to a wire rack to cool.

Vanilla Buttercream (for 12 cupcakes) 
I doubled the recipe so had enough to cover my 24 cupcakes :)
Ingredients 
150g unsalted butter
♥ 1 tsp vanilla extract
1-2 tbsp milk
280g icing sugar

Method 
1) Place the butter in a bowl and beat with an electric mixer for 2-3 mins until pale and creamy.
2) Beat in the milk, vannilla extract and gradually sift in the icing sugar.
3) Beat for 2-3 mins until the buttercream is light and fluffy.
4) Spoon the buttercream into a large piping bag fitted with a large metal nozzle with a plain tip.
5) Pipe using a circular motion starting on the outside of the cake working in to the middle. (let the cupcakes cool down fully before decorating)

Chocolate Sauce (for 12 cupcakes) 
I doubled the recipe so had enough to cover my 24 cupcakes :)
Ingredients 
85g chocolate
♥ 25g butter
1tbsp golden syrup

Method 
1) Melt the chocolate, butter and syrup together in a heatproof bowl over a saucepan of simmering water.
2) Keep stiring until smooth and leave to cool continuing to stir every so often.
3) Drizzle the chocolate mixture over the top of each cupcake.

To finish sprinkle with hundreds and thousands and place a maraschino cherry on the top, as these were made for a 21st birthday I used writing icing to place a '21' on each cherry...enjoy!
