Time for a '99' Cupcake

Thought it was about time I tried out one of the yummy recipes from 'The Cupcake' book I got for christmas...I decided to make them into birthday cupcakes for my boyfriend's 25th birthday....here goes. I used a basic vanilla cupcake recipe which came with my cupcake maker....this makes 6 but I decided to make 4 BIG ones instead, YUMMY!

Cupcakes
50g unsalted butter at room temperature
50g caster sugar
1 medium egg
1/2 teaspoon vanilla extract
50g self-raising flour
-Cream together butter and sugar until pale then add the egg and vanilla extract and beat until combined.
-Sift the flour and fold into the mixture, until smooth.
-Spoon the mixture equally between the cupcake cases and bake for 8-10 minutes (in a cupcake maker) -When risen and golden in colour turn on to a wire rack to cool.

Buttercream (enough to pipe 8 cupcakes)
225g unsalted butter
1 tbsp cream or milk
350g icing sugar
-Place the butter in a bowl and beat with an electric mixer for 2-3 mins until pale and creamy.
-Beat in the cream and gradually sift in the icing sugar.
-Beat for 2-3 mins until the buttercream is light and fluffy.
-Spoon the buttercream into a large piping bag fitted with a large star nozzle.
-Decorate with hundreds and thousands, a chocolate flake and strawberry sauce.
